The truffle

The truffle is a tuber characteristic of the area around Asti and Alba. It is round and may have some protuberances; it is light brown with whitish veins.
The truffle lives 10 - 15 cm. underground in symbiosis with the roots of oaks, poplars, chestnuts, willows, in fresh and wet soil.
We can seek truffles with the aid of trained dogs or of pigs, that scent the smell then dig.
The truffle seekers must be attentive that the pig doesn't eat the truffles, since it loves it very much.
On the third weekend of November in Asti there is the Regional Fair of truffle, where you can taste truffle dishes and typical wines.
We can use this tuber to have some food gain flavour: for instance risotto, tagliatelle, creamed vegetables, fried eggs, meat… In all these dishes we use grated truffles.
